Reconnecting with the living world begins with silent listening. Plants don't speak, but they respond. Animals don't debate, but their presence is like a dialogue. Humans, on the other hand, perhaps talk too much—and listen to each other very little! Perhaps wisdom lies in adopting the language of trees? Slow, patient, and deeply rooted.
So how can we make our actions a form of listening? How can we work the land without it turning into a cacophony? By putting safeguards in place.
Organic. Planet score. Biodynamic. Is that enough?

Sustainability may not be a technique, but a way of inhabiting time. Therefore, we might experiment with polyculture or biodynamic farming to align ourselves with a more balanced rhythm, not to follow a passing fad. Producing differently would first require self-transformation.
But then: what level of awareness do we need to demonstrate in order to "produce rightly"? How can we know if we are not still missing the truth?

How can we reconcile a territory with the people who live there? Perhaps by ceasing to try to transform it before we understand it.
After all, a place is not a backdrop: it is a memory. It reveals itself to those who listen to it, and only to them. Therefore, honoring this collective memory would consist of welcoming the other, where they are, with their words, their gestures, their way of being. It would mean being aware of their heritage and their connections.
Perhaps it would also be a matter of practicing "letting ourselves be surprised." Of not imagining answers a priori.
Ultimately, agriculture is a lesson in humanity in itself! So many things are beyond our control… It seems to allow boldness only to those who accept losing or being wrong.

To be contemporary?
It's about accepting that we are shaped by our times. Whether we walk in the city or through the vineyards, we encounter the same questions: how to live together, how to preserve what sustains us, how to move forward without damaging ourselves? And how to share it. These are our challenges. "Preserve" by creating natural beverages. "Share" by designing them naturally low in alcohol. To be continued.

Sérame will not be saved by nostalgia, but by a vision: to offer a place where one feels rooted, where every living being has a place. A territory is like a forest: it harbors visible forces and others that lie beneath the surface. The great local figures are the immense trees; the artisans, the bushes that provide structure; and the anonymous ones, the patient humus. It would be a mistake to celebrate only the trunks!
True wealth lies in "that hidden something." In the "almost obscure," the modest, the common.
Our challenge would be to succeed in sharing the invisible. To defend our territory through the sensation it evokes. Yes. Perhaps that would be the key.
